Coconut Martini

I'm a big fan of holidays... family time, a possible day off of work, and above all else - FOOD!! Easter always reminds me of light foods, especially when it comes to desserts. I always picture those cute little cupcakes with the coconut sprinkled on top (colored green) and the little bunnies sticking out. Know what I'm talking about? So anyhoodle, it got me thinking about a drink like that. If you find yourself in the mood for a little coconut, you might want to give this a whirl...

COCONUT MARTINI (from food.com)

Ingredients

    • 1 ounce vanilla vodka, well chilled
    • 1/3 cup coconut cream, chilled
    • 1 ounce coconut rum
    • 1 vanilla beans

Directions

  1. Place all ingredients into a cocktail shaker. Strain into a martini glass and serve with the vanilla bean folded into it. (so both ends peek out).

  2. I think you should totally make this when I come home this summer. We should have a pool party at Mom's. The kids would have a blast!
