Cool, Light, and Refreshing: Mojito

Holy Heck! You'd swear I'd fallen off the planet, I'm sure. I've had so much going on in the real world, I can't even begin to get into all of it. Anyhoodle, I've missed you so much. I hope you've all had a great start to summer and you've been busy testing out some cocktail recipes that you'd share with me.

Speaking of summer, let's kick it off with a seasonal classic - the mojito. It's refreshing. It's light and breezy. It's the perfect choice to help cool you off on a hot summer day. (If you prefer the strawberry version, check out this previous post.)

MOJITO (from allrecipes.com)

Ingredients:
10 Fresh mint leaves
1/2 Lime, cut into 4 wedges
2 tbl. White sugar (or to taste)
1 c. Ice cubes
1.5 fl oz. White rum
1/2 c. Club soda


Directions:
Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime. Add 2 more lime wedges and the sugar, and muddle again. DON'T strain mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the rest of the way with club soda. Stir, taste, and add more sugar, if desired. Garnish with an additional lime wedge.
